LIBER PATER’s grapes selection is so rigorous that the harvests are qualified as liturgical. From their arrival in the fermenting room, the grapes are destemed and crushed, and sent to the fermenting vat, according to the geographical origin of the grape in the vineyard, the vine’s age and its variety. It is only then that the wine making process starts, depending on the wine’s color: red, white or sweet white.
The wine is matured in hand made oak barrels from central France. Liber Pater uses this demanding method for the Denarius wine, so as to let the wine breath during its early maturation. This process magnifies the original characteristics and tastes of the different grapes, thus expressing fully the richness of their intensity, delicacy and stability.
